Dinner On The Go

In an earlier blog, I started discussing how I handle my lunches on the go with my busy lifestyle. Generally I like 300 calories (max) with 10g of fat (max). For dinner I'm not sure how many calories I take in but I like for the meat to be lean with a generous serving of veggies (for my low iron intake) and a decent starch. Tonight I really didn't feel like cooking. But I went on and cooked given that I would only like to spend 15 minutes or less slaving in the kitchen. You'd be SURPRISED how many great meals you can make between the microwave and the George Foreman grill.

Tonight I decided I would cook lemon pepper marinated fish filet with butter herb mashed potatoes and fine cut green beans. I started reading the instructions on the mashed potatoes and to my dismay, I failed to maintain a stash of milk for side dishes like so. Me being creative and crafty thought about throwing in 1 egg. BUT, eggs makes things rise. So I scratched that idea and replaced the whole milk with water. I closed my eyes as I brought the boiling water to a halt and dropped in the flakes. To my surprise, the potatoes formed as they would have with milk AND it tasted good! So I began to steam my green beans and popped my filet in the microwave. The filet was done in 5, the green beans was done in 5 and the potatoes was done in 5! I was so excited I took a picture of it! All of the food portions are products of ALDIs and are pretty healthy. It was very tasty and a light meal for this time of night on the go! Stay tuned for more quick and easy healthy meals!
